Ingredients
  

  • 1.5 lbs baby potatoes
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • Optional: parmesan fresh herbs

Method
 

  1. Add potatoes to a pot with cold salted water. Boil until fork-tender (12–15 minutes).
  2. Drain and let steam dry for 5 minutes.
  3. Smash potatoes to ¼-inch thickness.
  4. Brush both sides with oil and season well.
  5. Air fry at 400°F for 10 minutes.
  6. Flip and air fry another 10–12 minutes until glassy and crisp.
  7. Add parmesan in the last 3 minutes if using. Serve hot.

Notes

  • Dry potatoes crisp better—don’t skip the steam step
  • Cook in batches for best texture
  • Add cheese late to avoid burning
  • Serve immediately for maximum crunch
