Method
- Add potatoes to a pot with cold salted water. Boil until fork-tender (12–15 minutes).
- Drain and let steam dry for 5 minutes.
- Smash potatoes to ¼-inch thickness.
- Brush both sides with oil and season well.
- Air fry at 400°F for 10 minutes.
- Flip and air fry another 10–12 minutes until glassy and crisp.
- Add parmesan in the last 3 minutes if using. Serve hot.
Notes
- Dry potatoes crisp better—don’t skip the steam step
- Cook in batches for best texture
- Add cheese late to avoid burning
- Serve immediately for maximum crunch
