Ingredients
  

  • ¾ cup yellow cornmeal
  • ¾ cup all-purpose flour
  • 2 tbsp sugar
  • 1 tbsp baking powder
  • ½ tsp salt
  • 2 large eggs
  • ½ cup whole milk
  • ¼ cup melted unsalted butter
  • 3 tbsp honey
  • Honey Butter
  • ¼ cup unsalted butter softened
  • 2 tbsp honey
  • Pinch of salt

Method
 

  1. Whisk dry ingredients in a bowl.
  2. Whisk wet ingredients in a separate bowl.
  3. Combine gently until just mixed.
  4. Fill silicone muffin cups ¾ full.
  5. Air fry at 320°F for 10–12 minutes.
  6. Brush warm muffins with honey butter.

Notes

  • Do not overmix the batter.
  • Use silicone muffin cups for best results.
  • Let muffins rest 2 minutes before removing.
  • Brush honey butter twice for max flavor.
