Ingredients
  

  • 3 cups sweetened shredded coconut
  • ¾ cup sweetened condensed milk
  • Zest of 2 limes
  • 2 tbsp fresh lime juice
  • 1 tsp vanilla extract
  • ½ cup white chocolate wafers
  • ½ tsp coconut oil optional

Method
 

  1. Combine coconut, condensed milk, lime zest, lime juice, and vanilla in a bowl.
  2. Stir until sticky and evenly mixed.
  3. Scoop and shape into small mounds.
  4. Line air fryer basket with parchment.
  5. Air fry at 325°F for 7–9 minutes until lightly golden.
  6. Cool completely.
  7. Melt white chocolate and drizzle over macaroons.
  8. Let chocolate set before serving.

Notes

  • Use fresh lime for best flavor
  • Don’t overbake or macaroons will dry out
  • Cool fully before adding chocolate
  • Store airtight to keep chewy texture
