Ingredients
  

  • 2 cups cannellini beans
  • 1 carrot chopped
  • 1 celery stalk
  • 1 onion
  • 3 garlic cloves
  • 2 tbsp olive oil
  • 4 cups broth
  • 1 cup crushed tomatoes
  • 1 tsp thyme
  • 2 cups stale bread
  • Greens kale/spinach
  • Parmesan rind optional

Method
 

  1. Heat olive oil and sauté vegetables.
  2. Add garlic and thyme.
  3. Stir in beans and tomatoes.
  4. Add broth and simmer 20–25 minutes.
  5. Add bread and let it thicken.
  6. Stir in greens and cook briefly.
  7. Adjust seasoning and serve.

  • Stale bread is essential for texture.
  • Simmer slowly for best flavor.
  • Use good olive oil—it makes a difference.
