Authentic Nonna’s 15-Minute Pomodoro Sauce

Ingredients
  

  • 1 28 oz can whole San Marzano tomatoes
  • 3 tbsp extra virgin olive oil
  • 3 cloves garlic thinly sliced
  • ½ tsp sea salt or to taste
  • 6 –8 fresh basil leaves
  • Optional: pinch red pepper flakes

Method
 

  1. Crush tomatoes by hand in a bowl.
  2. Heat olive oil in wide pan over medium heat.
  3. Add garlic and cook 1 minute until fragrant.
  4. Add crushed tomatoes and salt.
  5. Simmer uncovered for 12–15 minutes.
  6. Tear basil into sauce and stir.
  7. Adjust salt and serve immediately.

Notes

  • Use whole San Marzano tomatoes for best flavor.
  • Do not brown the garlic.
  • Do not cover the pan while simmering.
  • Tear basil by hand, don’t chop.
