Ingredients
  

  • 2 large boneless skinless chicken breasts (butterflied)
  • ½ cup all-purpose flour
  • 2 large eggs
  • 1 tbsp milk
  • 1 cup Italian seasoned breadcrumbs
  • ½ cup panko breadcrumbs
  • ½ cup freshly grated Parmesan cheese
  • 1 tsp garlic powder
  • ½ tsp black pepper
  • ½ tsp salt
  • Olive oil spray

Method
 

  1. Preheat oven to 425°F and line a baking sheet with parchment.
  2. Set up three bowls: flour, eggs with milk, and breadcrumb mixture.
  3. Season chicken lightly with salt and pepper.
  4. Dredge chicken in flour, dip in egg, then coat in breadcrumbs.
  5. Place on baking sheet and spray lightly with olive oil.
  6. Bake 12 minutes, flip, spray again, and bake another 10–12 minutes.
  7. Rest 5 minutes before serving.

Notes

  • Pound chicken evenly for best texture
  • Use olive oil spray, not heavy drizzles
  • Flip halfway for even crispiness
  • Reheat in oven or air fryer for best leftovers
