Ingredients
  

  • cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • ½ cup unsalted butter softened
  • ¾ cup brown sugar
  • 2 eggs
  • ½ cup Greek yogurt
  • 1 tsp vanilla extract
  • ½ cup chopped walnuts
  • ½ cup chopped pistachios
  • Honey Syrup
  • ½ cup honey
  • ¼ cup water
  • 1 tbsp lemon juice

Method
 

  1. Preheat oven to 375°F.
  2. Mix dry ingredients.
  3. Cream butter and sugar.
  4. Add eggs, yogurt, vanilla.
  5. Combine mixtures and fold in nuts.
  6. Bake 18–22 minutes.
  7. Brush warm muffins with warm syrup.

Notes

  • Don’t overmix batter
  • Brush syrup in layers
  • Cool slightly before serving
  • Flavor improves overnight
