Ingredients
  

  • 2 cups all-purpose flour
  • tsp baking powder
  • ½ tsp salt
  • 3 large eggs
  • 1 cup granulated sugar
  • ½ cup avocado or vegetable oil
  • ½ cup Greek yogurt or sour cream
  • ½ cup fresh blood orange juice
  • 2 tbsp blood orange zest
  • 1 tsp vanilla extract

Method
 

  1. Preheat oven to 350°F and prep pan.
  2. Whisk eggs and sugar until pale.
  3. Add oil, yogurt, vanilla, juice, and zest.
  4. Mix dry ingredients separately.
  5. Fold dry into wet until just combined.
  6. Pour into pan and bake until toothpick shows moist crumbs.
  7. Cool completely before glazing.

Notes

  • Use fresh juice only
  • Don’t overbake
  • Flavor improves overnight
  • Store covered at room temp 2 days
