Ingredients
  

  • Pudding:
  • 1 cup flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 egg
  • 1 cup sugar
  • 1 tbsp butter
  • 1 tbsp apricot jam
  • 1 tsp vanilla
  • 1 tbsp lemon zest
  • 1 tbsp vinegar
  • 1 cup milk
  • 1 ½ cups blueberries
  • Sauce:
  • 1 cup heavy cream
  • ½ cup sugar
  • 4 tbsp butter
  • ½ tsp vanilla

Method
 

  1. Preheat oven to 350°F and grease 8×8 dish.
  2. Whisk flour, baking soda, and salt.
  3. Beat egg, sugar, butter, and jam.
  4. Add vanilla and lemon zest.
  5. Add vinegar + milk.
  6. Add dry ingredients; mix gently.
  7. Fold in blueberries.
  8. Bake 30–35 minutes.
  9. Heat sauce ingredients until sugar melts.
  10. Pour hot sauce over hot pudding and rest 10 minutes.

Notes

  • Don’t thaw blueberries if using frozen.
  • Pour sauce while pudding is warm for best absorption.
  • Apricot jam is essential for flavor.
  • Serve pudding warm, not hot.
