Cajun Chicken Sloppy Joes

Ingredients
  

  • 1 lb ground chicken
  • 1 bell pepper diced
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 rib celery optional, diced
  • 1 tbsp Tony Chachere’s Cajun seasoning
  • ¾ cup tomato sauce
  • 2 tbsp olive oil
  • ½ tbsp brown sugar
  • ½ cup heavy cream optional
  • ½ tsp hot sauce optional
  • 4 Brioche buns toasted
  • Salt & pepper to taste

Method
 

  1. Heat olive oil in nonstick skillet over medium.
  2. Sauté onion, bell pepper, and celery (if using) until soft, about 4 mins.
  3. Add garlic—stir for 30 seconds, don’t burn!
  4. Add ground chicken. Break it up. Brown until cooked through.
  5. Sprinkle Cajun seasoning, salt, and pepper; stir to coat.
  6. Add tomato sauce, brown sugar, heavy cream, and hot sauce. Simmer 7-10 mins till thick.
  7. Toast Brioche buns; pile on the messy mixture.
  8. Serve hot. Warn guests: It will drip :)
