Ingredients
  

  • Crust
  • 2 cups graham cracker crumbs
  • ½ cup melted butter
  • cup brown sugar
  • Apple Layer
  • 3 large apples Honeycrisp or Granny Smith, sliced
  • 3 tbsp butter
  • ¼ cup brown sugar
  • 1 tsp cinnamon
  • 1 tsp lemon juice
  • Cheesecake Layer
  • 16 oz cream cheese softened
  • ½ cup granulated sugar
  • 2 large eggs
  • ½ cup sour cream
  • 1 tsp vanilla extract
  • Caramel
  • 1 cup caramel sauce Ghirardelli recommended

Method
 

  1. Preheat oven to 325°F.
  2. Mix crust ingredients and press into a springform pan.
  3. Cook apples with butter, sugar, cinnamon, and lemon until softened.
  4. Beat cream cheese, sugar, eggs, sour cream, and vanilla until smooth.
  5. Add half the caramel on the crust.
  6. Add half the apples.
  7. Pour cheesecake batter over apples.
  8. Add remaining apples on top.
  9. Bake 45–50 minutes or until set.
  10. Cool slowly, then chill at least 6 hours.
  11. Drizzle with caramel before slicing.

Notes

  • Room-temp cream cheese makes the texture silky.
  • Chill overnight for best slicing.
  • Use Honeycrisp or Granny Smith apples for acidity and flavor balance.
  • Caramel quality matters—don’t use thin syrup.
