Ingredients
  

  • Dip
  • 1 can 15 oz black beans, drained & rinsed
  • 1 can 15 oz black-eyed peas, drained & rinsed
  • 1 cup cherry tomatoes diced
  • 1 red bell pepper diced
  • ½ red onion finely diced
  • ¼ cup fresh cilantro chopped
  • 1 ripe avocado diced (optional)
  • Dressing
  • cup olive oil
  • 3 tbsp fresh lime juice
  • 2 tbsp red wine vinegar
  • 1 tbsp honey
  • 1 clove garlic minced
  • ½ tsp salt
  • ¼ tsp black pepper

Method
 

  1. Combine beans and chopped vegetables in a large bowl.
  2. Whisk dressing ingredients until smooth.
  3. Pour dressing over dip and gently mix.
  4. Chill 30 minutes before serving.
  5. Fold in avocado just before serving.

Notes

  • Rinse beans well
  • Chill for best flavor
  • Add avocado last
  • Taste and adjust seasoning before serving
