Ingredients
  

  • 1 sheet puff pastry thawed
  • 1 cup fresh spinach or 3/4 cup frozen, drained well
  • 1 tbsp olive oil
  • 2 cloves garlic minced
  • 1/2 cup feta cheese crumbled
  • 2 tbsp cream cheese
  • 1/4 tsp black pepper
  • 1 egg for egg wash
  • Optional: 1 tbsp dill or parsley

Method
 

  1. Sauté spinach with olive oil and garlic until all moisture evaporates.
  2. Mix spinach with feta, cream cheese, pepper, and herbs.
  3. Roll out puff pastry and spread the filling evenly.
  4. Fold the pastry in half and press lightly.
  5. Slice into strips using a sharp knife or pizza cutter.
  6. Twist each strip and place on a baking sheet.
  7. Brush with egg wash.
  8. Bake at 425°F for 15–20 minutes until golden and flaky.

Notes

  • Keep pastry cold for best layering and puff.
  • Dry spinach thoroughly to prevent sogginess.
  • Use quality feta for better flavor and texture.
  • Cool on a rack to maintain crispness.
