Ingredients
  

  • 1 ½ lbs flank steak or skirt steak
  • 3 tbsp unsalted butter
  • 4 garlic cloves minced
  • cup BBQ sauce e.g., Stubb’s Original
  • 2 tbsp raw honey
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • Salt & black pepper to taste
  • 8 small corn tortillas
  • Optional toppings:
  • Pickled red onion
  • Cotija cheese
  • Fresh cilantro
  • Sliced avocado or avocado crema
  • Lime wedges

Method
 

  1. Marinate steak: Rub steak with olive oil, smoked paprika, chili powder, salt, and pepper. Rest 30 minutes (overnight for best results).
  2. Make garlic butter: Melt butter in skillet on low. Add garlic, sauté until golden. Remove from heat.
  3. Cook steak: Sear steak in hot skillet or grill, 3–4 minutes per side (medium-rare). Rest 10 minutes, slice thin against grain.
  4. Sauce beef: In skillet, mix BBQ sauce + honey until bubbly. Add sliced beef, toss well. Pour in garlic butter.
  5. Heat tortillas: Warm over flame or skillet.
  6. Assemble tacos: Fill tortillas with beef and toppings. Serve with lime wedges.

Notes

  • Don’t skip resting the steak—it keeps juices locked in.
  • Garlic butter tip: Cook garlic low and slow; burnt garlic will ruin the flavor.
  • Sweetness balance: Stick to 2 tbsp honey max; more makes the tacos overly sweet.
  • Tortilla hack: Warm them properly—microwaving makes them chewy.
