Garlic Parmesan Roasted Chickpeas

Ingredients
  

  • 2 15-oz cans chickpeas, drained and rinsed
  • 2 tbsp olive oil
  • ½ tsp salt
  • ½ tsp garlic powder
  • cup freshly grated parmesan cheese
  • 2 cloves garlic minced
  • ¼ tsp black pepper

Method
 

  1. Preheat oven to 400°F.
  2. Pat chickpeas completely dry.
  3. Toss with olive oil, salt, and garlic powder.
  4. Roast 25–30 minutes, shaking halfway.
  5. Remove and add parmesan, garlic, and pepper.
  6. Roast another 8–10 minutes until crispy.
  7. Cool slightly before serving.

Notes

  • Dry chickpeas thoroughly for crispiness.
  • Add parmesan only near the end.
  • Don’t overcrowd the pan.
  • Best eaten fresh.
