Ingredients
  

  • 1 small seedless watermelon
  • 2 tbsp olive oil
  • ½ tsp sea salt
  • ½ tsp cracked black pepper
  • ½ cup crumbled feta cheese
  • 2 tbsp balsamic glaze
  • 2 tbsp fresh mint leaves
  • Optional: arugula or microgreens

Method
 

  1. Slice watermelon into 1–1½ inch thick steaks.
  2. Pat slices dry with paper towels.
  3. Brush lightly with olive oil.
  4. Sprinkle with salt and black pepper.
  5. Preheat grill to 400°F.
  6. Grill watermelon 2–3 minutes per side until grill marks appear.
  7. Transfer slices to serving plate.
  8. Top with feta cheese and drizzle balsamic glaze.
  9. Garnish with fresh mint and serve immediately.

Notes

1. Use thick watermelon slices so they hold together on the grill.
2. Grill quickly to prevent the fruit from becoming too soft.
