Ingredients
  

  • 1 lb ground chicken
  • 1 tbsp olive oil
  • ½ cup diced onion
  • 2 cloves garlic minced
  • ¾ cup pizza sauce
  • cups shredded low-moisture mozzarella
  • ¼ cup grated parmesan
  • 1 tsp Italian seasoning
  • ½ tsp paprika
  • Salt & pepper to taste
  • 1 package pizza dough
  • 1 egg for egg wash

Method
 

  1. Preheat oven to 400°F.
  2. Heat olive oil in skillet. Cook onion until soft.
  3. Add garlic, then ground chicken. Cook until just done.
  4. Season chicken and stir in pizza sauce. Remove from heat.
  5. Roll dough and cut into portions.
  6. Fill, cheese, fold, and seal pockets.
  7. Brush with egg wash.
  8. Bake 15–18 minutes until golden.

Notes

  • Don’t overfill pockets
  • Let filling cool slightly before assembling
  • Use low-moisture cheese
  • Rest before serving
