Ingredients
  

  • 1 cup quinoa
  • 2 cups water
  • 1 cup shredded carrots
  • 1 cup cucumber
  • 1 bell pepper
  • 1 cup roasted sweet potatoes
  • 1 cup roasted broccoli
  • 1 cup protein of choice
  • Dressing:
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tsp Dijon
  • 1 garlic clove
  • Salt + pepper

Method
 

  1. Cook quinoa and fluff.
  2. Prep veggies.
  3. Roast sweet potatoes + broccoli.
  4. Add protein.
  5. Mix dressing.
  6. Build bowls + serve.
