Method
- Heat olive oil in large pot over medium heat.
- Add onion, carrot, celery. Cook 5–7 minutes.
- Add garlic. Cook 30 seconds.
- Stir in tomatoes, oregano, rosemary. Simmer 5 minutes.
- Add beans, lentils, and broth. Bring to boil.
- Reduce heat and simmer 20–25 minutes.
- Blend 1 cup stew and return to pot.
- Add kale and cook 5 minutes.
- Adjust seasoning and serve.
Notes
- Blend part of the stew for creaminess.
- Add lemon juice at the end for brightness.
- Stew thickens as it cools; add broth when reheating.
- Tastes even better the next day.
