High Protein Italian White Bean Stew

Ingredients
  

  • 2 cans 15 oz each cannellini beans, drained & rinsed
  • 1 cup red lentils
  • 1 small onion diced
  • 3 garlic cloves minced
  • 1 carrot chopped
  • 1 celery stalk chopped
  • 1 can 14 oz crushed tomatoes
  • 4 cups vegetable broth
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 sprig rosemary
  • 1 cup chopped kale
  • ½ tsp red pepper flakes optional
  • Salt & pepper to taste
  • Parmesan for topping

Method
 

  1. Heat olive oil in large pot over medium heat.
  2. Add onion, carrot, celery. Cook 5–7 minutes.
  3. Add garlic. Cook 30 seconds.
  4. Stir in tomatoes, oregano, rosemary. Simmer 5 minutes.
  5. Add beans, lentils, and broth. Bring to boil.
  6. Reduce heat and simmer 20–25 minutes.
  7. Blend 1 cup stew and return to pot.
  8. Add kale and cook 5 minutes.
  9. Adjust seasoning and serve.

Notes

  • Blend part of the stew for creaminess.
  • Add lemon juice at the end for brightness.
  • Stew thickens as it cools; add broth when reheating.
  • Tastes even better the next day.
