Ingredients
  

  • 2 tbsp extra virgin olive oil
  • 1 medium yellow onion finely chopped
  • 5 garlic cloves minced
  • 2 cans 28 oz each crushed tomatoes
  • 1 tbsp tomato paste
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp dried oregano
  • ½ tsp red pepper flakes optional
  • Fresh basil leaves

Method
 

  1. Heat olive oil over medium-low heat.
  2. Add onion and cook until soft.
  3. Stir in garlic and cook briefly.
  4. Add tomato paste and stir.
  5. Pour in crushed tomatoes and seasonings.
  6. Simmer on low for 45–60 minutes.
  7. Finish with fresh basil.

Notes

  • Use good tomatoes—they make or break the sauce.
  • Simmer uncovered for thicker consistency.
  • Freeze leftovers for quick meals.
  • Butter beats sugar for acidity control.
