Ingredients
  

  • 1 lb ground chicken 93% lean
  • ¾ cup Italian-style breadcrumbs
  • cup grated Parmesan cheese
  • 1 large egg
  • ¼ cup milk
  • 3 garlic cloves minced
  • 1 tsp Italian seasoning
  • ¾ tsp salt
  • ½ tsp black pepper
  • 1 tbsp fresh parsley chopped

Method
 

  1. Preheat oven to 400°F and line a baking sheet with parchment paper.
  2. Combine all ingredients in a bowl and mix gently until just combined.
  3. Scoop and roll into 1½-inch meatballs.
  4. Place on baking sheet and bake for 18–22 minutes or until cooked through.
  5. Serve as-is or simmer briefly in marinara sauce.

Notes

  • Do not overmix or meatballs will turn dense
  • Milk keeps chicken moist, don’t skip it
  • Use a scoop for even sizing
  • Freeze cooked meatballs for up to 2 months
