Method
- Preheat oven to 400°F and line a baking sheet with parchment paper.
- Combine all ingredients in a bowl and mix gently until just combined.
- Scoop and roll into 1½-inch meatballs.
- Place on baking sheet and bake for 18–22 minutes or until cooked through.
- Serve as-is or simmer briefly in marinara sauce.
Notes
- Do not overmix or meatballs will turn dense
- Milk keeps chicken moist, don’t skip it
- Use a scoop for even sizing
- Freeze cooked meatballs for up to 2 months
