Ingredients
  

  • Lemon Blueberry Loaf
  • 1 ¾ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ cup unsalted butter softened
  • 1 cup granulated sugar
  • 2 large eggs room temperature
  • Zest of 2 lemons
  • ¼ cup fresh lemon juice
  • 1 tsp vanilla extract
  • ½ cup buttermilk
  • 1 ½ cups blueberries fresh or frozen
  • 1 tbsp flour for tossing blueberries
  • Blueberry Glaze
  • ½ cup blueberries
  • 1 tbsp lemon juice
  • 1 –1½ cups powdered sugar

Method
 

  1. Preheat oven to 350°F. Line a 9x5 loaf pan.
  2. Whisk dry ingredients together.
  3. Cream butter and sugar until fluffy.
  4. Add eggs, lemon zest, juice, and vanilla.
  5. Alternate adding dry ingredients and buttermilk.
  6. Fold in floured blueberries gently.
  7. Bake 50–60 minutes. Cool completely.
  8. Simmer blueberries and lemon juice, strain, and whisk with powdered sugar.
  9. Drizzle glaze over cooled loaf.

Notes

  • Do not overmix batter
  • Cool loaf fully before glazing
  • Frozen blueberries work well
  • Tent with foil if browning too fast
