Ingredients
  

  • 2 lbs bone-in skin-on chicken thighs
  • 3 tbsp olive oil
  • Zest of 2 lemons
  • Juice of 1½ lemons
  • 4 garlic cloves minced
  • 1 tbsp fresh rosemary chopped
  • 1 tbsp fresh thyme chopped
  • 1 tsp salt
  • ½ tsp black pepper

Method
 

  1. Preheat oven to 400°F.
  2. Pat chicken dry and season with salt and pepper.
  3. Mix olive oil, lemon zest, lemon juice, garlic, and herbs.
  4. Coat chicken evenly and marinate 30 minutes.
  5. Arrange chicken in baking dish, skin side up.
  6. Bake 35–45 minutes until internal temp reaches 165°F.
  7. Rest 5–10 minutes before serving.

Notes

  • Don’t marinate longer than 2 hours.
  • Use a thermometer for best results.
  • Zest adds flavor without extra acidity.
  • Broil briefly for crispier skin.
