Ingredients
  

  • 1 cup rolled oats
  • ½ cup vanilla protein powder
  • ½ cup almond butter
  • cup maple syrup
  • ¼ tsp peppermint extract
  • ½ tsp vanilla extract
  • ¼ cup mini chocolate chips
  • 1 tbsp cocoa powder optional
  • Pinch of salt

Method
 

  1. Mix oats, protein powder, cocoa powder, and salt in a bowl.
  2. Add almond butter, maple syrup, peppermint extract, and vanilla.
  3. Stir until a thick dough forms.
  4. Fold in chocolate chips.
  5. Roll into balls and chill 20–30 minutes.
