Ingredients
  

  • Miso Glaze
  • 3 tbsp white miso paste
  • 1 tbsp honey
  • 1 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tsp grated ginger
  • 1 garlic clove
  • Salmon
  • 4 salmon fillets 6 oz each
  • Salt & pepper
  • 1 tbsp olive oil
  • Bok Choy
  • 4 baby bok choy
  • 1 tbsp sesame oil
  • 1 garlic clove
  • Pinch salt

Method
 

  1. Preheat oven to 400°F.
  2. Whisk glaze ingredients together.
  3. Pat salmon dry and season lightly.
  4. Brush glaze generously over salmon.
  5. Bake 10–12 minutes.
  6. Broil briefly if desired.
  7. Sauté bok choy in sesame oil and garlic 3–5 minutes.
  8. Serve salmon with bok choy and drizzle remaining glaze.

Notes

  • Do not overbake salmon.
  • Use white miso for balanced sweetness.
  • Pat salmon dry before glazing.
  • Broil carefully to avoid burning.
