No-Bake Lotus Biscoff Bars

Ingredients
  

  • Lotus Biscoff cookies – 2 cups crushed
  • Unsalted butter – ½ cup melted
  • Cream cheese – 16 oz softened
  • Powdered sugar – ¾ cup
  • Lotus Biscoff spread – 1½ cups total divided
  • Vanilla extract – 1 tsp optional
  • Salt – pinch optional

Method
 

  1. Line a 9x9 pan with parchment paper.
  2. Mix cookie crumbs with melted butter. Press firmly into pan.
  3. Chill crust for 15 minutes.
  4. Beat cream cheese until smooth.
  5. Add powdered sugar and 1 cup Biscoff spread. Mix well.
  6. Spread filling over crust.
  7. Melt remaining Biscoff spread and spread on top.
  8. Chill for 4 hours or overnight.
  9. Slice and serve

  • Use full-fat cream cheese for best texture.
  • Chill overnight for cleanest slices.
  • Warm topping gently to avoid separation.
