Ingredients
  

  • 1 lb ground beef
  • 1 small yellow onion diced
  • 3 cloves garlic minced
  • 1 ½ cups elbow macaroni
  • 1 15 oz can diced tomatoes
  • 1 15 oz can tomato sauce
  • 1 15 oz can kidney beans, drained
  • 2 ½ cups beef broth
  • 1 cup shredded cheddar cheese
  • 2 tbsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • ½ tsp oregano
  • Salt + pepper to taste

Method
 

  1. Brown the beef in a Dutch oven until deeply browned.
  2. Add onion and garlic; cook until softened.
  3. Stir in chili powder, smoked paprika, cumin, and oregano.
  4. Add macaroni, tomatoes, tomato sauce, beans, and broth.
  5. Simmer 12 minutes until pasta is tender.
  6. Stir in cheese and let rest 5 minutes before serving.

Notes

  • Use beef broth instead of water for richer flavor.
  • Freshly grated cheese melts better than pre-shredded.
  • Let it rest 5 minutes to thicken properly.
  • Add broth when reheating to restore creaminess.
