Ingredients
  

  • 1.5 lbs boneless skinless chicken thighs about 6 pieces
  • 1 cup barbecue sauce Sweet Baby Ray’s or favorite
  • 2/3 cup pineapple juice from fresh or canned
  • 12 oz pineapple chunks or rings fresh or canned
  • 2 medium jalapeños seeded and diced
  • 2 tbsp honey
  • 2 tbsp soy sauce
  • 2 tbsp olive oil
  • Juice of 1 lime
  • 2 garlic cloves minced
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • For garnish: fresh cilantro lime wedges

Method
 

  1. In a bowl, combine BBQ sauce, pineapple juice, honey, soy sauce, lime juice, garlic, and jalapeños.
  2. Marinate the chicken thighs in the mixture for at least 15 minutes (preferably 4 hours or overnight for best flavor).
  3. Preheat grill to medium-high or oven to 400°F.
  4. Grill chicken 5–6 minutes per side, basting with marinade. Or, bake in a dish topped with pineapple and jalapeños for 30–35 minutes, until internal temp reaches 165°F.
  5. Grill or broil pineapple rings alongside chicken until caramelized.
  6. Slice and serve chicken with pineapple, garnished with cilantro and lime.

Notes

  • For extra tenderness, let the chicken marinate overnight in the fridge.
  • Always reserve a portion of marinade to use as a glaze. Don’t baste with raw marinade.
  • Use a digital thermometer for perfect doneness—pull chicken at 165°F for juicy meat.
  • This recipe is adaptable: try it on the grill, oven, or skillet, and swap thighs for breasts as needed.
