Method
- Mix all patty ingredients gently. Shape into oval patties.
- Sear patties 3–4 minutes per side. Remove.
- Sauté mushrooms and onions in butter. Add garlic.
- Stir in flour. Cook 1 minute.
- Add red wine and reduce slightly.
- Add beef broth and thyme. Simmer.
- Return patties to skillet. Simmer 10–15 minutes until 160°F internal temp.
- Spoon gravy over patties and serve.
Notes
- Use 80/20 beef for best texture.
- Do not overmix meat mixture.
- Simmer gently to prevent tough patties.
- Let patties rest briefly before serving.
