Ingredients
  

  • 6 cups ridged potato chips
  • 1 cup unsalted butter
  • 1 cup brown sugar
  • 2 cups semi-sweet chocolate chips
  • ½ teaspoon vanilla extract
  • ¼ teaspoon flaky sea salt optional
  • Optional toppings:
  • ¼ cup chopped pecans
  • ¼ cup crushed pretzels
  • 2 tablespoons toffee bits

Method
 

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Spread potato chips evenly across the baking sheet in a single layer.
  3. In a saucepan melt butter and brown sugar over medium heat.
  4. Bring mixture to a boil and cook for 3 minutes, stirring constantly.
  5. Pour the hot toffee evenly over the potato chips.
  6. Bake for 5 minutes until bubbly.
  7. Remove from oven and sprinkle chocolate chips over the hot toffee.
  8. Wait 2 minutes, then spread the melted chocolate evenly.
  9. Sprinkle sea salt and toppings.
  10. Let cool completely before breaking into pieces.

Notes

  • Use thick ridged potato chips for the best crunch.
  • Stir the toffee constantly to prevent burning.
  • Spread chocolate while the toffee is still hot so it melts smoothly.
  • Store toffee in an airtight container for up to one week.
