skinless chicken thighs (or breasts), thinly sliced

bell peppers
mixed colors, sliced

large red onion
sliced

avocado oil
or olive oil
Juice of 2 limes

chili powder

smoked paprika

cumin

garlic powder

onion powder

Salt & pepper to taste
Flour or corn tortillas
Method
Preheat oven to 425°F.
Toss chicken, peppers, and onion with oil and seasonings. Spread on a sheet pan.
Roast 18–20 minutes, flipping halfway through.
Squeeze fresh lime over everything.
Serve with warm tortillas and toppings.
