Sheet Pan Chicken Fajitas

Ingredients
  

  • 1 ½ lbs boneless skinless chicken thighs (or breasts), thinly sliced
  • 3 bell peppers mixed colors, sliced
  • 1 large red onion sliced
  • 3 tbsp avocado oil or olive oil
  • Juice of 2 limes
  • 2 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp oregano
  • Salt & pepper to taste
  • Flour or corn tortillas

Method
 

  1. Preheat oven to 425°F.
  2. Toss chicken, peppers, and onion with oil and seasonings. Spread on a sheet pan.
  3. Roast 18–20 minutes, flipping halfway through.
  4. Squeeze fresh lime over everything.
  5. Serve with warm tortillas and toppings.
