Ingredients
  

  • 2 lbs boneless skinless chicken breasts
  • 3 lemons zested and juiced
  • ¼ cup olive oil
  • 4 cloves garlic minced
  • 2 tsp Italian seasoning
  • 1 tsp salt
  • ½ tsp black pepper
  • Optional: ¼ cup chicken broth

Method
 

  1. Place chicken breasts in the slow cooker.
  2. In a bowl, whisk lemon juice, zest, olive oil, garlic, seasoning, salt, and pepper.
  3. Pour mixture over chicken and flip to coat.
  4. Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours.
  5. Serve whole or shredded with your favorite sides.

Notes

  • Don’t overcook—check at the minimum time
  • Chicken thighs work great if you prefer juicier meat
  • Add cream at the end for a richer sauce
  • Leftovers keep well for 3–4 days refrigerated
