Ingredients
  

  • 2 tbsp extra virgin olive oil
  • 5 cloves garlic thinly sliced
  • 1 –2 tsp crushed red pepper flakes
  • 1 28 oz can San Marzano whole tomatoes
  • ½ tsp kosher salt
  • ¼ tsp black pepper
  • 2 tbsp fresh parsley
  • 1 lb penne pasta
  • ½ cup reserved pasta water

Method
 

  1. Heat olive oil over medium heat.
  2. Add garlic; cook until fragrant.
  3. Stir in red pepper flakes; bloom 30 seconds.
  4. Add crushed tomatoes, salt, pepper.
  5. Simmer 15–20 minutes.
  6. Cook pasta al dente. Reserve water.
  7. Toss pasta with sauce and pasta water.
  8. Garnish with parsley. Serve hot.

Notes

  • Use high-quality San Marzano tomatoes.
  • Bloom chili flakes in oil for best flavor.
  • Always finish pasta in sauce.
  • Adjust spice gradually.
