Spinach Strawberry Salad

Ingredients
  

  • 6 cups baby spinach
  • 2 cups sliced strawberries
  • ½ cup candied pecans
  • ¼ cup thin-sliced red onion
  • ½ cup crumbled feta or goat cheese
  • 1 avocado diced
  • Dressing:
  • 3 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 1 tbsp honey
  • 1 tsp Dijon mustard
  • Salt & pepper

Method
 

  1. Wash and dry the spinach.
  2. Slice strawberries and onions.
  3. Whisk dressing ingredients until smooth.
  4. Add spinach, strawberries, onions, pecans, cheese, and avocado to a mixing bowl.
  5. Pour dressing over the salad and toss gently.
  6. Serve immediately.

Notes

  • Don’t dress the salad early — it gets soggy fast.
  • Use ripe strawberries for best flavor.
  • Goat cheese melts beautifully into the dressing (if you’re into that).
  • Add grilled chicken for a complete meal.
