Ingredients
  

  • 12 oz elbow macaroni
  • 2 medium sweet potatoes about 2 cups cooked, cubed
  • 1 ½ cups whole milk
  • 2 tbsp unsalted butter
  • 1 ½ cups sharp cheddar cheese freshly grated
  • ½ cup Gruyère or mozzarella grated
  • 1 tsp salt plus more to taste
  • ½ tsp smoked paprika
  • ¼ tsp black pepper
  • ½ tsp garlic powder
  • Optional: pinch cayenne or 1 tsp Dijon mustard

Method
 

  1. Boil sweet potatoes in salted water until fork-tender. Drain.
  2. Cook pasta until just shy of al dente. Drain and set aside.
  3. Blend sweet potatoes, milk, butter, salt, paprika, pepper, and garlic powder until smooth.
  4. Pour sauce into a saucepan over low heat. Stir in cheeses gradually until melted.
  5. Add pasta to sauce and stir until coated. Adjust seasoning.
  6. Serve immediately or transfer to baking dish and bake at 375°F for 15 minutes if desired.

Notes

  • Use freshly grated cheese for best texture
  • Keep heat low to prevent grainy sauce
  • Add milk slowly if sauce thickens too much
  • Taste before serving—seasoning matters
