Swicy Nduja and Honey Pasta Sauce

Ingredients
  

  • 12 oz rigatoni or penne
  • 3 oz nduja
  • 1 tbsp olive oil
  • 3 garlic cloves minced
  • 1 cup crushed tomatoes
  • ½ cup heavy cream optional
  • 1 –2 tbsp honey
  • ½ cup grated Parmesan
  • Salt & pepper
  • Fresh basil

Method
 

  1. Boil pasta in salted water. Reserve ½ cup pasta water.
  2. Heat olive oil in skillet. Add garlic.
  3. Stir in nduja and melt fully.
  4. Add tomatoes and simmer 5–7 minutes.
  5. Stir in honey and cream.
  6. Toss pasta with sauce.
  7. Add pasta water as needed.
  8. Finish with Parmesan and basil.

Notes

  • Adjust honey based on spice tolerance.
  • Use freshly grated Parmesan for smooth melt.
  • Save pasta water — it emulsifies sauce.
  • Let sauce simmer briefly before combining.
