Ingredients
  

  • 2-4 boneless skinless chicken breasts
  • 1 cup fresh pineapple chunks
  • 1 red bell pepper sliced
  • 1 carrot thinly sliced
  • 1 zucchini sliced
  • 1/4 to 1/2 cup teriyaki sauce store-bought or homemade
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 2 green onions chopped (for garnish)
  • Heavy-duty aluminum foil

Method
 

  1. Preheat oven or grill to 400°F (200°C).
  2. Cut foil into large squares; lightly oil surface.
  3. Place chicken breasts on foil; drizzle with olive oil and season with salt and pepper.
  4. Top chicken with pineapple, bell pepper, carrot, and zucchini.
  5. Pour teriyaki sauce evenly over everything.
  6. Fold foil tightly into packets, sealing completely.
  7. Bake or grill for 25-30 minutes, until chicken is cooked through (internal temperature 165°F/75°C).
  8. Carefully open packets, garnish with green onions, and serve.

  • Marinate chicken longer for deeper flavor.
