Ingredients
  

  • Crust:
  • 1 cup graham cracker crumbs
  • 4 tbsp melted butter
  • 1 tbsp sugar optional
  • Filling:
  • 8 oz full-fat cream cheese softened
  • ½ cup powdered sugar
  • 1 tbsp lemon zest
  • 3 tbsp fresh lemon juice
  • 1 tsp vanilla
  • Pinch of salt
  • ¾ cup heavy cream whipped
  • Toppings optional:
  • Lemon curd
  • Fresh berries
  • Extra graham crumbs

Method
 

  1. Mix graham cracker crumbs with melted butter. Divide into cups.
  2. Beat softened cream cheese until smooth.
  3. Add powdered sugar, lemon zest, lemon juice, vanilla, and salt.
  4. Whip heavy cream to soft peaks and fold into mixture.
  5. Spoon or pipe filling into the cups.
  6. Chill at least 1–2 hours.
  7. Add toppings before serving.

Notes

  • Cold cream whips best — don’t let it warm up.
  • Zest first, juice second — always.
  • Chill longer for a firmer texture.
  • Don’t skip that tiny pinch of salt — it pulls the lemon flavor forward.
